COOKING STEPS

Step 1

Wash the rabbit, dry it on a paper towel, carefully cut into portions.

Step 2

Peel the potatoes, carrots, onions, garlic. Chop the vegetables into large pieces.

Step 3

Put a thick bottom pan over medium heat. Add some oil and spread the vegetables. Roast the vegetables for 5~7 minutes until caramelised. Add salt and pepper, pour the white wine. Roast for 5 minutes more until the alcohol evaporates. Put the vegetables into a baking dish.

Step 4

Season the rabbit with salt and pepper to taste. Roast until golden brown on the pan where the potatoes were cooked. Add the rabbit pieces to the vegetables.

Step 5

Pour sour cream into the meat and spread evenly throughout the dish. If the sour cream does not cover the rabbit pieces, add a little water.

Step 6

Preheat the oven to 180 degrees. Cover the baking dish with a lid or foil and put into the oven for an hour. Serve the rabbit decorated with a sprig of greens.

Enjoy!
