Dubai Chocolate is an exquisite dessert that combines crispy kadaif dough with delicate pistachio paste and chocolate, creating an unbeatable harmony of flavours.
The delicacy was invented in 2021 by Sarah Hamouda, a pastry chef from Dubai. Since then, the dessert has become a real gastronomic hit on social media and made a splash in the world of sweets.

Pistachio paste can be made at home by grinding pistachios in a blender with plenty of sugar and butter. Use a silicone mould for easy removal of the ready-made dessert.
Ingredients
White chocolate | 50 g |
Milk chocolate | 100 g |
Dark chocolate | 100 g |
Pistachio paste | 100 g |
Kadaif dough by Rud TM | 50 g |
Butter by Rud, 82.5% | 150 g |

Steps to Make It
1. Cut the kadaif dough into small pieces.
2. Melt the butter in a preheated frying pan, add the finely chopped dough and fry it, stirring constantly, until it becomes golden and crispy. Leave it to cool.
3. Melt the white chocolate in a water bath or in the microwave.
4. Make patterns on the bottom of the mould. This will make the chocolate both look attractive and add a nice sweet accent.
5. Next, melt the milk and dark chocolate together to balance the sweetness.
6. Form the chocolate bar. Spread a layer of melted milk and dark chocolate evenly over the mould, form chocolate borders. Put the mould in the fridge or freezer to harden the chocolate.
7. While the chocolate is hardening, mix the toasted kadaif dough with the pistachio paste.
8. Put the filling on the hardened chocolate, spreading it evenly over the mould.
9. Pour the rest of the melted chocolate over the filling and smooth the surface.
10. Put the mould in the fridge for a few hours for the chocolate to harden well.
