
Ekmek kadaif with cream and whipped cream
BackDESCRIPTION OF THE DISH
A traditional Greek dessert with three layers: crispy kadaif pastry, vanilla custard and whipped cream. Topped with a generous portion of chopped pistachios.

Ingredients
Kadaif dough by Rud TM | 500 g |
Khutorok Selianskyi butter, 72.5% | Khutorok Selianskyi butter, 72.5% |
Sugar | 5 cups |
Water | 1.5 cups |
Lemon | ½ pc. |
Cinnamon | 1 stick |
Milk by Rud TM | 4 glasses |
Egg yolks | 4 pcs |
Cornstarch | ½ cup |
Vanilla extract | 1 tsp. |
Fat cream | 2 cups |
Powdered sugar | 2 tbsp. |
Chopped pistachios | to taste |

Steps to Make It
1. Prepare the dough. Preheat the oven to 180°C. Fluff the kadaif dough and brush it with melted butter.
2. Put the dough into the baking tin and spread it evenly.
3. Bake for 30 to 35 minutes until golden brown.
4. Prepare the syrup. In a saucepan, mix 2 cups of sugar, water, and the juice of half a lemon. Add a cinnamon stick.
5. Bring to a boil, reduce heat and simmer for 10 minutes. Remove the cinnamon and let the syrup cool.
6. Pour the cooled syrup over the kadaif. Let the dough soak in the syrup until it is completely absorbed.
7. Prepare the cream. Mix milk, a glass of sugar, egg yolks, starch and vanilla in a saucepan.
8. Put it on medium heat. Stirring constantly, cook until thickened. Cool the cream to room temperature.
9. Assemble the dessert. Put the cream on the syrup-soaked kadaif and smooth it out.
10. Whip the cream with the powdered sugar until stiff peaks form and spread over the cream.
11. Sprinkle with chopped pistachios. Leave in the refrigerator for two hours.
