Greek dessert with kadaif dough and nuts
Before wrapping the nut filling in the dough, carefully separate the dough into fibres and cover with a damp towel to prevent it from drying out. Shape each roll neatly with a cooking brush dipped in butter.

Sugar | 450 g |
Lemon | 1 pc. |
Cinnamon | 1 stick |
Water | 330 ml |
Walnuts or pistachios | 250 g |
Ground cinnamon | 1 tsp |
Ground cloves | 1 pinch |
Khutorok Selianskyi butter, 72.5% | 250 g |

Steps to Make It
1. Combine sugar, lemon zest, cinnamon stick and water in a saucepan, bring to a boil. Cook for 2 minutes and let the syrup cool.
2. Add a pinch of cinnamon and cloves to the walnuts and grind in a blender.
3. Melt the butter and grease a baking dish.
4. Divide the unfrozen kadaif dough into strips 5 cm wide and 30 cm long. Put two tablespoons of the chopped nut mixture on the beginning of the strip and roll it up. Put all the rolls into a baking dish.
6. Sprinkle the remaining nut mixture over the baking dish and pour over the melted butter.
7. Put the baking dish in a preheated oven at 160–180 °C and bake for 45–60 minutes until the rolls are golden brown.
8. Strain the cooled sugar syrup and pour it over the ready-made dessert. Leave it for 10–15 minutes.
