The dish is based on kadaif dough, which is baked until golden brown, creating a pleasant contrast with the cream filling. The ricotta balances the sweetness of the syrup with hints of citrus and vanilla, while the pistachios add aromatic depth and a pleasant crunch.
A simple recipe for kadaif dough with ricotta and pistachios

Ingredients
Kadaif dough by Rud TM | 500 g |
Butter by Rud, 82.5% | 250 g |
Ricotta cheese | 300 g |
Orange zest | 5 g |
Pistachios | 100 g |
Sugar | 2.5 cups |
Vanilla extract | 1 tsp. |
Water | 1.5 cups |
Lemon | ½ pc. |

Steps to Make It
1. For the filling, combine the ricotta, pistachios, orange zest, 2 tbsp of sugar and vanilla extract, mix until smooth.
2. Fluff the kadaif dough and divide into portions.
3. Put the filling on each portion and make a roll. Put the rolls into a baking dish greased with butter.
4. Melt the butter and pour it over the rolls.
5. Bake at 180 °C for 30–35 minutes until golden brown.
6. To make the syrup, mix 2 cups of sugar, water and the juice of half a lemon in a saucepan. Bring to a boil and cook for 10 minutes. Leave it to cool.
7. Pour the chilled syrup over the hot rolls. Let it stand until the syrup is completely absorbed.
