DESCRIPTION OF THE DISH

Egg-nog is a flavourful cold drink made with milk, spices, and chicken eggs.

Scotland is believed to be the birthplace of this unusual milk punch. Yet, egg-nog became so popular with the Americans that it has long become a traditional Christmas drink in the US and Canada.

It is usually made of whipped egg whites, milk, cream and sugar, giving egg-nog its silky texture and tasty-looking creamy foam. Yet, the drink gets its special flavour from spices: cinnamon, cloves, nutmeg, — and quite a bit of alcohol: rum, whiskey or brandy.

You can make a soft egg-milk mixture non-alcoholic or vegetarian by adding vegetable cashew milk.

Milk by RudТМ 900 ml
Sugar 180 g
33 % fat cream 480 ml
Bourbon 240 ml
Spicy rum 120 ml
Nutmeg to taste

Cooking

Separate egg yolks from egg whites. In a deep bowl, whisk the yolks with 120 g of sugar using a blender. Whisk until the mass turns a nice beige colour.

Add milk, fatty cream, bourbon and spicy rum to the egg-sugar mixture.

In a separate bowl, whisk the egg whites and the rest of the sugar into a froth.

Mix the contents of both bowls and pour in the mugs. Sprinkle each portion with grated or ground nutmeg.

The spicy drink with a “kick” for a big group of friends is ready!

A little secret: experts advise keeping the drink in the fridge for at least one night to make the taste of the egg-nog rich and flavourful. There is no need to worry about its freshness — alcohol will preserve the ingredients safely.

Boiled egg-nog

In case you are convinced that any dish containing chicken eggs has to be cooked, make the boiled egg-nog. The high temperature will reveal the full taste of spices and give the cocktail a delicate baked milk flavour.

Ingredients

Fresh chicken eggs 2 pcs
Sugar 80 g
Milk by RudТМ 250 ml
33 % fat cream 75 ml
Bourbon or dark rum 80 ml
A pinch of salt
Cinnamon to taste
Cloves to taste
Nutmeg to taste
Vanilla (vanilla extract) to taste

Cooking

Pour milk into a small saucepan, add a pinch of salt and spices, except vanilla. Heat the milk on low heat until it starts steaming. There is no need to boil the mixture. Take off the heat, let the milk get infused with the spices, and strain through a fine tea sieve.

Separate the egg whites from the egg yolks. Put the egg whites in the fridge and grind the egg yolks with sugar until they become a light creamy mass, and add the spicy milk slowly while stirring.

Put the mixture on low heat and heat for 10 minutes. The perfect temperature would be 70 °C. Remove from heat. Add the cream and vanilla extract.

When the milk cools down, slowly add the alcohol, and stir the mixture with a whisk. Leave the cocktail in the fridge for 2 to 3 hours.

Before serving the cocktail, whisk the whites to a thick shiny froth and carefully pour the spicy milk-egg mixture in. Sprinkle the cocktail with ground nutmeg and pour into crystal cups or cocktail tumbler glasses. Enjoy!

Egg yolks 2 pcs
Condensed milk 2 tbs
Cinnamon ¼ ts
Vanilla sugar 1 ts
A pinch of cloves
Whipped cream to taste
Nutmeg to taste

Cooking

Mix milk, vanilla sugar, cinnamon, cloves and condensed milk in a small saucepan. Heat the spicy milk mixture on low heat, simmering.

Whisk the egg yolks with sugar using a blender. Add the warm milk slowly, while whisking the mixture.

Pour the resulting mass back into the pan and heat over low heat until the mixture thickens. Keep on the hot cooker for another 5 minutes.

Pour egg-nog into glasses, add whipped cream and sprinkle with grated nutmeg.
