DESCRIPTION OF THE DISH

Light vegetable soup with green beans is a tasty and savoury starter for every day cooking. It’s a great meal that will bring benefits to the body and won’t lead to weight gain. 

Vitamin-rich green beans combined with corn, carrots and bell peppers add juiciness and a pleasant sweet taste to the dish. And the colours of this vegetable soup are so tempting! 

Nutritionists recommend eating green beans at least twice a week. So here is an easy appetising soup recipe which is fast and easy to prepare thanks to the Rud TM ready-made vegetable blends. This dish with green beans isn't hard to make and is a great option for daily cooking! 

Vegetable soup with green beans, meat and rice

To improve the taste of the soup, green beans are often lightly fried in vegetable oil and only then added to the dish. And if you cook this vegetable soup using meat broth with some seafood or turkey meat added, you will have a hearty and healthy lunch. Eat with croutons or fresh home-made bread!

Easy Dinner

Ingredients

Turkey meat 150 g
Rud TM green beans 200 g
Potatoes 2
“Havaiska” vegetable blend 200 g
Water 1.5–2 L
Onion 1
Carrot 1
Garlic cloves 1-2
Vegetable oil as needed
Fresh parsley dill to taste
Bay leaves 2
Salt to taste
Ground black pepper to taste

COOKING

Step #1

Pour 1.5 litres of water into a saucepan and put it over medium heat. Put turkey pieces into the boiling water and cook the meat for three minutes. Change the water and cook the turkey meat until par-cooked.

Step #2

Add frozen green beans and “Havaiska” vegetable blend of blanched rice, green peas, corn and bell peppers to the meat. Stir the vegetables and cook for seven minutes. 

Step #3

Peel the potatoes, dice them and put in the saucepan with chopped garlic and bay leaves. Add salt, black pepper to taste and cook the soup for another 15 minutes.

Step #4

Meanwhile, finely chop the onion, grate the carrots and fry the vegetables in a pan in vegetable oil. Put the vegetables in the saucepan.

Step #5

Finely chop the dill and parsley, add to the soup. The dish is ready, remove from heat. Let the soup set for 10-15 minutes and serve it warm.
