Pastry with Rud cottage cheese



Puddings, muffins, biscuits, custard pies are not the full range of delicacies made of cottage cheese as a filling or a dough ingredient.

In this collection, we have prepared for you the recipes of a very simple meringue, flavory buns and puff pastry croissant.

Cottage cheese of TM Rud, used as a filling for them, is a high-quality milk product containing the amino acids necessary for the body. Products made of it will be delicious, nutritious and useful.

In the mentioned recipes we used 9% cottage cheese. However, if you wish, you can replace it with reduced-fat one.

Puff pastry croissant

These croissants are very beaten and tender, and the recipe itself is fast and quite easy to cook. You can add raisins or other dried fruits to the filling.

Easy Breakfast


Puff pastry of TM Rud 350 g
Chicken egg 1 pc.
Yogurt cheese of TM Rud 200 g
Sugar 50 g
Frozen pastries
Dairy products curd cheese
Curd cheese 0%

Firstly, defrost the pastry as indicated on the package.

Grate the cheese using a sieve. If you add raisins, cover them with the boiling water at this stage.

Add 25 grams of sugar to the cheese. Give it a stir.

Heat the oven up to 180°C. Cut the pastry into triangles. Put cheese into each piece, wrap in a croissant. Dip the top in the sugar, and put it on a sheet pan. Then spread a whipped yolk on each croissant.

Put the croissants in the oven. Bake for 20 minutes.

Puff pastry croissants are ready.

45 minutes Easy Breakfast


Cottage cheese of TM Rud 250-300 g
Chicken egg 4 pcs.
Flour 1 glass
Lemon juice 1 tbsp.
Sugar 1 glass
Salt a pinch
Dairy products curd cheese
Curd cheese 0%

Firstly, put the eggs in a bowl, add sugar and a pinch of salt. Give a stir. Then add sieved flour gradually.

The next step is to mix the cottage cheese with two spoons of sugar, add the lemon juice.

Heat the oven up to 200°C. Spread the butter on the separable form, pour out part of the dough. Put the cheese with sugar inside and spread it. Then pour the second part of the dough on the top.

Put it in the oven. Cook for 20 minutes; then the temperature can be lowered.

Take it out, decorate it (with berries, icing, anything you like) and serve.

Flavoury buns

Spoil yourself and your loved ones with buns with cheese. These delicious buns will not make anyone indifferent!

80 minutes Easy Breakfast


For dough:
Milk of TM Rud 120 ml
Fresh yeast 50 g
Chicken egg 3 pcs.
Sugar 150 g
Flour 500 g
Sunflower oil 3 tbsp.
Butter of TM Rud 120 g
Salt a pinch
For the filling:
Cottage cheese of TM Rud 400 g
Chicken egg 2 pcs.
Sugar 4 tbsp.
Vanilla sugar 1 pack
Dairy products milk
Milk 2.5%
Dairy products curd cheese
Curd cheese 0%

The first step is to prepare a sponge dough. Rub the yeast with two spoons of sugar. Add warm milk, one glass of flour (sieved one) and give a stir. Put it in a warm place, covered with a towel.

The next step is filling. Rub the cheese, sugar and vanilla sugar thoroughly, add the eggs.

If your sponge dough to this time has become gassy, you can knead the dough. Add the whipped eggs into the sponge dough. Melt butter and add to the dough as well. Sift the flour out, stirring constantly. After the dough becomes thick, knead it with your hands. Add salt, and add sunflower oil at the very end. Knead it thoroughly, cover with a towel and put it in a warm place for 15-20 minutes.

Divide the dough into small pieces. Form the cookies of these pieces. Cut each piece at the edges (1 cm from the edge). Put the filling inside. The next step is to fold the cut pieces obliquely: left to the right side, and the right one to the left. Our dough has to “embrace” the filling.

Heat the oven up to 180°C. At this time, put the baking paper on the sheet pan. Distribute the buns on the sheet pan. Then place the dish in the oven for 25 minutes.

While the buns are baked, prepare a whipped yolk to spread it on the top. Take buns, spread the whipped yolk on them and put them back to the oven for another 5 minutes. Take it out and wait until it cools down, enjoying the charming aroma!
