DESCRIPTION OF THE DISH

Risotto is an Italian way of cooking rice. Along with pizza and pasta, it is one of the main dishes of the Italian cuisine.

Risotto is usually made in a pan until it is al dente, i.e. half-cooked. The rice absorbs the broth and wine added during the cooking process and acquires a soft and smooth taste.

You can make the dish even richer by adding vegetables, meat or seafood to get the desired taste.

The most delicious risotto is the version with button mushrooms and cheese. It is an incredibly nourishing and fragrant dish. Mushrooms give risotto a rich flavour and delicate nut flavour. Cream and butter make the dish creamy. And Parmesan cheese brings everything together like a cherry on top.

Meat broth can be replaced with vegetable stock to suit vegetarians and those fasting.

Risotto with Button Mushrooms, Cream and Parmesan

It is very important to constantly stir the dish while cooking. Properly cooked risotto should be neither pasty like porridge nor crumbly like pilaf: rice should hold shape and be well coated in the sauce at the same time.

Ingredients

Arborio rice (can be replaced with short-grain rice) 200 g
Button mushrooms by Rud™ 300 g
Chicken broth 700 ml
Onion 1
Dry white wine 70 ml
Garlic cloves 2
Volohodske Butter by Rud™, 82.5 % 25 g
Cream (20%) 200 ml
Parmesan cheese 50 g
Salt to taste
Saffron pinch
Risotto with Button Mushrooms, Cream and Parmesan

COOKING

Step #1

Peel the onion and shred it. Fry it in olive oil until translucent.

Step #2

Add button mushrooms to the onion and fry for about 7-10 minutes over a low heat. Salt to taste. Add a knob of butter to the mushrooms and cook for a few minutes until it melts.

Step #3

Put the rice into the pan with the mushrooms and mix the ingredients well.

Step #4

Bring the chicken broth to boil and add it to the rice and mushrooms. Cook over a medium heat until the rice is done.

When it gets soft, add cream and a pinch of saffron. Lower the heat and cook for another 5 minutes. 

Step #5

The dish is almost cooked. Just add some wine, mince garlic and braise the rice with button mushrooms tightly covered for 5 minutes. 

Serve the risotto on the plates and sprinkle it with some Parmesan cheese.
