DESCRIPTION OF THE DISH

Home-made potatoes, flavoured with mushrooms, cracklings and seasonal vegetables are steaming so delicately! This rich and incredibly tasty Ukrainian dish is traditionally topped with sour cream and then stewed under a closed lid, leaving the vegetables to simmer from the heat.

Fried to golden, mushrooms give the side-dish a rich spicy aroma. And during the cooking process, fresh sour cream with spices turns into the most delicious sauce.

Stewed vegetables with mushrooms are rarely cooked exactly according to the recipe. Most ingredients of the dish are easy to replace or supplement. Instead of potatoes, you can use beans, courgettes and bell peppers, and add bacon or pieces of beef to mushrooms.

Stewed Vegetables with Button Mushrooms in Sour Cream Sauce

A delicious mix of stewed vegetables and mushrooms in sour cream is a nutritious lunch for the whole family. The dish is very tender, filling and flavourful. Serve with light salads and fresh herbs.

Ingredients

Potatoes 7
Sliced Button Mushrooms by RudTM 400 g
Onions 2
Carrot 1
Mexican Vegetable Mix by RudTM 150 g
Sour cream by RudTM, 21 % 3 tbsp
Starch 1 tsp
Khutorok Selianskyi Butter by RudTM, 73 % to taste
Vegetable oil as needed
Greens to taste
Bay leaf to taste
Salt, pepper to taste
Stewed Vegetables with Button Mushrooms in Sour Cream Sauce

Steps to Make it

Step 1

Peel and chop the onion, sauté in a deep fireproof pan until transparent. 

Step 2

Slice the carrots, add to the onion and fry for another three minutes.

Step 3

Add button mushrooms to the vegetables and fry for seven minutes.

Step 4

Meanwhile, peel and dice the potatoes, put them in a pan with the Mexican vegetable mix. Stir and fry for 4 to 5 minutes.

Step 5

Pour a glass of water into the pan, add 3 tablespoons of sour cream, spices and a piece of butter. Cover with a lid, simmer for 15 minutes.

Step 6

Dilute the starch in half a glass of cold water and add to the stew. Stir and simmer for another 5 to 7 minutes.

Step 7

Add garlic and herbs a few minutes before the dish is ready.

Dish the stewed vegetables with mushrooms on plates and serve hot.
